The grapes are harvested by hand according to their maturity,
then sorted
destemmed (the stalk is separated from the berries) to keep only the quintessence.
Then the grains are sorted one by one in order to keep only the 100% healthy berries.
Their quality will depend on the size of the vintage.
The berries are vatted; slowly the temperature will rise and the fermentations will be able to start.
Aged in an underground cellar dating back more than 200 years in the center of Draguignan, our cuvées are meticulously worked, constantly monitored by our cellar master.
